Cooking with Cash-Wa Episode 4: Ginger Pear Applesauce

Pear-Ginger Applesauce Yield: About 2 quarts
If you have an excess of apples in your backyard or looking for something to make with your kids, homemade applesauce is a real treat and so easy to make. You can add your own spices (cloves, cinnamon, nutmeg, cayenne, cranberries) and it makes for a perfect condiment on grilled porkchops or turkey cutlets.
· 2 pounds honeycrisp apples (about 6 each)
· 2 pounds pears (about 6 each)
· 1 tablespoon fresh ginger (peeled & grated)
· 12 oz. Apple Cider
· ½ teaspoon Kosher Salt
· ¼ cup granulated sugar
Peel, core, and slice apples and pears into a heavy bottom saucepot.
Add grated ginger and apple cider to the pot and bring to a boil over medium-high. Reduce heat and simmer until apples are very soft and falling apart, 25 to 30 minutes.
Using a potato masher or heavy gauge whisk, blend soft fruit into a somewhat smooth texter with some small chunks remaining. If you want a smoother texture, blend in a food processor or blender. Allow the mixture to cool.
Transfer applesauce to airtight containers and refrigerate up to 5 days or freeze up to 2 months.
